Ugly Butterfly

The Michelin star announcements always send a ripple of excitement through the restaurant world, and this year Cornwall gained a brand new one.
Scottish-born chef Adam Handling MBE owns a small collection of celebrated restaurants and gastropubs across the country. These include his Michelin-starred restaurant Frog in London’s Covent Garden, The Loch & The Tyne in Old Windsor, and The Tartan Fox nestled in the Cornish countryside near Truro. In 2021 he opened Ugly Butterfly at the Carbis Bay Hotel and, in 2025, the restaurant moved south to Newquay. Over the past six months it has quietly settled into its new home and, in February, was awarded its very first Michelin star.
We were treated to brilliant blue skies as we pulled up at The Headland Hotel, a grand Grade II listed building that has proudly overlooked Newquay’s famous Fistral Beach since 1900. It is here that Ugly Butterfly has landed, in a beautifully refurbished ground floor wing…
