Sat in prime position above a perfect crescent of white sand and impossibly blue sea, the Carbis Bay Hotel couldn’t boast a dreamier setting. Making the most of it is MOR (the Cornish word for sea), Sellers’ brand-new restaurant, which hangs over the beach.
Before I’d even crossed the threshold, the view had caught my eye. Layers upon layers of turquoise sea melted into white sand and endless sky in a panorama so vast it almost looked unreal. Godrevy Lighthouse floated in the distance, while St Ives sat tucked away just around the curve of the bay...
